
A refreshing no-cook grated salad of crisp carrots and apple, tossed with fresh coconut, sesame seeds, a touch of jaggery, a splash of apple cider vinegar and a pinch of salt.
Wash the carrots and apple thoroughly. Peel the carrots and grate them. Peel the apple (or leave the skin on for extra fibre if preferred) and grate it. Place both in a mixing bowl.
Add the apple cider vinegar, grated coconut, jaggery powder and a pinch of salt. Toss everything gently until well combined. Taste and adjust jaggery or salt if needed.
Sprinkle 2 tsp sesame seeds over the mixture, mix lightly, then divide into two bowls and serve.
Notes
This is a simple, Indian-style kachumber / grated salad. The vinegar brightens the natural sweetness of the apple and carrots, while the coconut adds richness and the jaggery gives a mild caramel note. Best eaten fresh so the grated fruit and vegetables stay crisp.
